Oatmeal Bread

This Oatmeal Bread is super easy to throw together and makes a beautiful rustic loaf. It makes great Peanut Butter and Jelly sandwiches. As written this recipe is vegan, but if your not vegan you can use a more traditional egg wash or swap out the brown sugar for honey.
Ingredients:
- 3 cups Flour
- 1 cup rolled oats (old-fashioned oats)
- 1 1/2 teaspoons salt
- 3 tablespoons brown sugar
- 2 tablespoons extra virgin olive oil
- 2 teaspoons instant yeast
- 1 1/4 cups lukewarm milk (I used soy milk)
- 1 teaspoon maple syrup*
- 1 tablespoon soy milk*
- 1-2 Tablespoons rolled oats* (for topping)
Instructions:
In a large bowl (I’m using the bowl of my KitchenAid mixer because it’s my largest bowl, but I’ll be mixing this by hand.) add the flour, oats, salt, and brown sugar.
Stir with a whisk to combine. Whisking courtesy of my little helper.
Warm the milk in the microwave, and to that add the yeast and oil. Give it a quick stir before adding to the flour mixture.
Pour the wet into the dry and mix until it just comes together. Then turn out onto an oiled surface and knead with oiled hands for about 7 minutes .
*Note we are using oil instead of flour to knead this loaf because adding any extra flour will make this loaf dry.
Place the dough in an oiled bowl, cover and let rise for 1 hour.
turn out the risen dough onto an oiled surface press it into a rectangle and roll it into a loaf.
Place loaf in greased loaf pan with seam side down, cover and let rise for 1 to 1 1/2 hours until it has filled the pan.
Now for the vegan egg wash. It’s simply 1 part maple syrup to 3 parts plant based milk of choice. For this small loaf I’m using 1 teaspoon of maple syrup and 1 tablespoon of soy milk. **But if you’re not vegan feel free to use a traditional egg wash.
Carefully brush the risen loaf with the egg wash and sprinkle with oats. Bake at 350 for 35 to 45 minutes.
Allow it to cool for 10 minutes before removing it from the pan, and cool completely before slicing.
