Kale Salad with Honey Dijon Vinaigrette

I like to buy my kale prepackaged, it just saves so much time. It’s already triple washed, cut, and ready to eat. I have bought big bunches of kale from Farmers Markets and Grocery Stores and it costs significantly less but I still go for the bagged stuff, it’s totally worth it. Kale is so dirty and nobody wants sand in their salad. If you do buy a big bunch of fresh kale make sure you allow it to swim in a sink full of water and carefully wash each leaf to get all the dirt out. A salad spinner would also be helpful.
Ingredients:
- about 4 cups Kale
- 1 Tbsp of extra virgin olive oil
- 1 small apple chopped
- 1 carrot grated
- 1/2 cup dried cranberries
- 1 small onion diced
- Honey Dijon Vinaigrette (recipe below)
Instructions:
Place kale in a big salad bowl and massage with olive oil, with your hands. I know it sounds funny but your going to have to trust me on this. Massaging the oil into the leaves softens the kale. While massaging feel around for any hard stems that may have made it past you previously, remove and discard. At this point, with your hands in the kale you can also tear any pieces that are too large into smaller bite sized pieces.
Add everything else to the bowl and toss well. Drizzle dressing on and toss again to combine.
**Disclaimer**
Honey isn’t vegan, but you can easily substitute Agave or even Maple Syrup for the Honey in the dressing to make it vegan. Or you can substitute an entirely different vegan dressing for the Honey Dijon Vinaigrette.
