Blueberry Belgian Style Waffles

Traditional Belgian waffles call for separating eggs and beating the egg whites until stiff peaks form… and that just seems like so much work. This has become my go-to waffle recipe, you can mix it up by using strawberries instead of blueberries (or chocolate chips! or chopped bananas!) and you can even play around with it by adding some spices like cinnamon and nutmeg. (*note- if you use frozen fruit be sure to defrost it first, you’ll probably need less milk so start with 1 and 1/4 cups milk and then add 1/4 at a time as needed.) **Bonus it’s VEGAN!!
Ingredients:
- 2 cups self-rising flour
- 2 Tbsp sugar
- 1/4 cup (or 4 Tbsp) baking powder
- 1/8 tsp salt
- 1 cup fresh blueberries
- 2 cups soy milk
- 1 tsp pure vanilla extract
- 1/4 cup (or 4 Tbsp) extra virgin olive oil
Instructions:
Combine all dry ingredients in a large bowl, stir with a whisk to combine. Add milk, vanilla, and oil; gently mix with a rubber spatula until well moistened. Fold in blueberries. Don’t over mix the batter. Now turn on the waffle iron. (Let the batter rest while your waffle iron is heating up.)
Spoon about 1 cup of batter onto hot waffle iron. I like to use my spring loaded ice cream scoop (ironically I never use this scoop for ice cream, but it’s my go-to for cupcakes, muffins, and obviously waffles) spread slightly with the back of the spoon. There are all kinds of waffle irons in this world so this may vary depending on the particular waffle iron you have.
Again there are so many different waffle irons out there… Mine has this green light that comes on when the waffles are done. The one I had previously had this loud annoying beep when the waffles were done, I loathed that beep. Obviously cooking time will also depend on the setting you use for your waffle iron. It’s a personal preference and there are no wrong settings, although it will probably take some trial and error to get it dialed in just right.
Once the waffle is done transfer to a warm plate, repeat with remaining batter. I like to keep my done plate in a warm oven to keep the waffles warm.
