Banana Bread

I never seem to be able to predict how many bananas my family is going to eat in a week. Some weeks I’ll buy a bunch of bananas (usually 8 or so in the bunch) and they are gone in 2 days, other weeks no one touches them and they’ve turned mostly brown at the end of the week. Don’t ever throw away brown bananas! Brown bananas can be peeled sliced and frozen for later use, frozen bananas make the best smoothies! But my favorite thing to do with bananas that are past their prime is turn them into Banana Bread.
Ingredients:
- 2 cups all purpose flour
- 1 tsp baking soda
- 1/4 tsp salt
- 3/4 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 cup butter (1 stick) at room temperature
- 3/4 cup brown sugar
- 2 eggs beaten
- 1 tsp vanilla extract
- 2 – 2 1/3 cups mashed overripe bananas (3-4 bananas depending on size)
- 1 cup walnuts divided (3/4 cup for the batter + 1/4 cup for top) *optional
Instructions:
Preheat oven to 350* F and grease a 9×5″ loaf pan
In a medium sized bowl combine flour, baking soda, salt, cinnamon, and nutmeg. Stir with a whisk to combine and set aside. In a large bowl, cream together butter and brown sugar. Stir in eggs, vanilla extract, and mashed bananas until well blended.
Carefully dump flour mixture and 3/4 cup walnuts, if using, into banana mixture and stir until just moistened (20 strokes).
Pour batter into prepared pan, sprinkle with remaining 1/4 cup walnuts (I usually sprinkle a little cinnamon and sugar on top as well but that’s totally optional).
Bake in the center of your preheated oven for 60 to 65 minutes, until a toothpick comes out clean . Let bread cool in pan for 10 minutes, then turn out onto a wire rack. Cool completely before slicing.
